Strawberry Kiss Biscuits for Valentine’s Day

Valentine’s Day is just around the corner and already I’m thinking of baked goods, naturally! While we’ve never been big celebrators of Valentine’s Day, in 2013 this day became infinitely more special to us when my husband proposed to me at sunset on a deserted beach in the Caribbean. A little box of these kiss biscuits was the first Valentine’s gift I ever gave him and now when we make them, I’m instantly transported back to that moment in time on the beach at sunset. 
In my opinion, there are no better gifts to give or receive than either something edible, or something handmade and this gift idea ticks both those boxes. Just in time for Valentine’s Day, or if you don’t do Valentine’s Day, these make the sweetest gift for your special someone or as a little sweet treat for yourself.
Crunchy on the outside and soft on the inside, these Kiss Biscuits are sandwiched together with jam and topped with vanilla icing and have always been my favourite sweet treat. Handed down to me from my Mum, this recipe is really easy to make, yields heaps of cookies, freezes well and never disappoints. Try them for yourself and let me know what you think!

Valentine’s Day Kiss Biscuits 

Ingredients

Biscuit base
125g butter
1 egg
2 cups SR flour
1 cup white sugar
1 cup dessicated coconut

Icing
1 cup icing sugar
Dash of vanilla essence
Water, to desired consistency
Dessicated coconut for topping

Filling
Your favourite jam (I love this homemade strawberry version)

Method

1// Cream butter and sugar until light and fluffy. Add the egg and continue to beat until well combined. 
2// Add sifted flour and coconut and mix well until combined.
3// Lightly flour hands and a clean work surface. Roll out mixture using a rolling pin and cut into desired shapes.
4// Place on a lined baking tray, place into a pre-heated oven at 180C and bake for 10 minutes. Remove from tray and set aside to cool completely.
5// Combine ingredients for the icing, gradually adding very small amounts of water until the desired consistency is achieved.
6// Spread half the biscuits with icing and top with a sprinkle of dessicated coconut, and spread the remaining biscuits with a thin layer of jam. Sandwich two biscuits together and enjoy.
