I’ve always loved to bake – I definitely get that from my mum – and recently in the spur of the moment I decided to try my hand at making ice cream sandwiches. They were so easy to make and oh so amazing to eat that they had me wondering why I’d never made ice cream sandwiches before!
I baked the biscuits from scratch using my favourite biscuit recipe handed down to me from mum. The ice cream was store bought but I did stir through some frozen raspberries just to make the overall treat a little bit fancier and a whole lot more delicious. These were the perfect sweet treat for the warmer winter days we have had recently and I can’t even imagine how well they would go down in summer. But a word of warning – make sure after you make these, eat a few and then give the rest away. They are just so good, you might come close to eating the whole batch by yourself otherwise. Not that I did that. Promise 😉
I popped them in the freezer to chill for a few hours and they were perfect! Then I had to find some willpower to stop me eating them all at once! So yummy!
