A classic mojito is easily my favourite cocktail, and the refreshing hit of lime and mint make it the perfect Summer drink. With the weather warming up here in Australia, this fresh and punchy drink has been my go-to of late – perfect for a warm Friday night in with my husband.
Recently, I added a fun blueberry twist to my classic mojito recipe, and it’s too good not to share!
Blueberry Vodka Mojito
Makes 2 drinks
20 fresh mint leaves
1 lime, cut into eight wedges
30g white sugar, or to taste
Handful of fresh blueberries
2 cup of ice cubes
1 cup of club soda or soda water
1// Place mint leaves and lime wedges into a sturdy pitcher. Muddle the mint and limes together using a muddler (I usually use a mortar and pestle as I don’t have a muddler, and then transfer it to the pitcher). Add the sugar and muddle some more to release the mint oil and lime juice. Add most of the blueberries and muddle gently to release the blueberry juice.
2// Fill the pitcher with ice, add the vodka and top with club soda. Add the remaing blueberries and stir well. Taste and add a little more sugar if desired.
3// Share the blueberry mojito between two glasses and enjoy!
So easy, and so delicious – as if we really needed an excuse! Ty and I first made this recipe a few weeks ago (without blueberries) to serve as our signature cocktail at our wedding. We tested it ourselves a few times and then tested it on our families – it was such a hit so we knew we were onto a winner, and my recent addition of the blueberries give it just a little extra something.
Next, I’m thinking of trying a watermelon mojito…can you even imagine? We’re taking Summer to the next level down here in the Southern Hemisphere!
